Patti LaBelle’s Macaroni & Cheese

Check out the stylish pictures on my fridge.  My nephews, Noah & Adam, have some mad coloring skillz.  This cuteness warms my heart.

And Patti LaBelle’s Macaroni & Cheese warms my belly.

Miss Patti made this macaroni & cheese on Oprah.  It has since made the rounds around numerous friends.  It’s that good!  A big thanks to my lovely friend, Kat, for introducing me to it!

Macaroni & Cheese

Recipe from Patti LaBelle’s Recipes For The Good Life cookbook

Ingredients:

1 tbl vegetable oil

1 lb macaroni noodles

8 tbl butter

1 tbl butter

1/2 cup Muenster cheese, shredded

1/2 cup mild cheddar cheese, shredded

1/2 cup sharp cheddar cheese, shredded

1/2 cup Monterrey jack cheese, shredded

2 cups half & half

8 ounces Velveeta, cubed

2 eggs, lightly beaten

1/4 tsp seasoning salt

1/8 tsp pepper

Preheat oven to 350.  Lightly butter a 2.5 quart baking dish.  Fill large pot with salted water and bring to a rapid boil.  Add macaroni and oil.  Cook 7 minutes or until pasta is somewhat tender.  Drain well and return macaroni to pot.

Melt 8 tbl butter and stir into macaroni.

In a bowl, combine all of the shredded cheeses.

Add 1 1/2 cup of the shredded cheeses, half & half, cubed Velveeta, eggs, salt, and pepper to the macaroni.  Stir to combine.

Transfer macaroni to baking dish.  Top with the remaining shredded cheese.  Dot with 1 tbl butter.

Bake 30 to 35 minutes until edges of macaroni are golden brown and bubbly.  Allow macaroni to sit a few minutes to let it settle.  Serve and enjoy!!

What’s your favorite Patti LaBelle song???  For me, it’s “New Attitude”!!!  It makes me want to dance around in my PJ’s singing into my hair brush.

      Most definitely! I wonder if other recipes in her cookbook are just as good!

        S–she always calls her nieces, brothers, etc DORK! on FB. I told her she best not do that on my blog. 😉 I think my “New Attitude” comment almost tipped her over the edge, ha.
