Happy Peanut Butter Cookie Day!!!!!!! There was obviously no way I was letting this food holiday pass by me.
Now, granted I didn’t make traditional peanut butter cookies. But come on, who doesn’t love Reese’s Peanut Butter Cups?
Peanut Butter Cup Cookies
Recipe from Real Simple
Ingredients:
1 1/2 cup flour
1 tsp baking soda
1/2 tsp Kosher salt
1/2 cup unsalted butter, at room temperature
3/4 cup dark brown sugar
1/2 cup granulated sugar
1 egg
1 tsp vanilla extract
1 12 oz. package small PB cup, coarsely chopped
Preheat oven to 375. Line baking sheets with parchment paper. In a large bowl, whisk together flour, baking soda, and salt. Set aside.
Beat the butter and sugars together until creamy. Add the egg and vanilla extract and beat to combine.
Gradually add flour mixture to the wet ingredients. Mix just until incorporated.
Fold in the chopped PB cups. Use cookie scoop to drop mounds of dough on baking sheets about 2″ apart. Bake for about 10-13 minutes until light brown around the edges.
Makes about 36 cookies.
