Once again, procrastinator alert! I’ve been holding out on you since I made these brownies 2 weeks ago!
Two weeks ago, I went my friend, Angie’s, for her birthday party. It was a surf & turf dinner!
Now a quick word about my friend, Angie. I can’t describe my childhood without talking about her (and her family!). We’ve been friends since Kindergarten. We have HISTORY!! Most weekends growing up were spent at her house.
If it had been her birthday when we were younger, here’s what would have went down:

I didn’t participate in the dance contest very much. It was always a forgone conclusion that her older sister, Amy, would win. So it was no surprise when Amy went on to be the captain on the Pom squad in high school.
Although side note: once I spent days perfecting a dance routine to Paula Abdul’s Straight Up. I did win that dance contest at Angie’s!! It was a hit & run.
Our friend, Denise, once recorded me belting out a Bryan Adams song. It was used for my embarrassment long after we were too old for slumber parties. Thank goodness that tape was finally lost!
–her Mom would make us popcorn at around 10 pm
–watching Teen Witch or something of the like
–giggling until we peed……who spilled pop on the floor?
Nutella Brownies with Cream Cheese Frosting
Recipe from Love Veggies and Yoga
For the brownies:
4 squares semi-sweet Baker’s Chocolate
3/4 cup butter
2 cups sugar
1 tsp vanilla
1 scant cup flour
2/3 cup Nutella
For the cream cheese frosting:
8 oz whipped cream cheese, at room temperature
1 cup butter, at room temperature
4 cups powdered sugar
1 tsp vanilla extract
To make the brownies:
Preheat the oven to 350. Line a 9×13 inch cake pan with aluminum foil. Spray the aluminum foil with non-stick cooking spray. Set pan aside. (The foil allows you to easily take the brownies out of the pan after cooling, allowing for easier frosting.)
In the microwave, heat up your Baker’s chocolate and butter in a large bowl. Heat in 30 second increments, stirring in between, until melted, about 90 seconds.
Add sugar to melted chocolate and stir. Add in the eggs and vanilla to melted chocolate and stir. Add in the flour to the melted chocolate and stir. Pour batter into your cake pan lined with aluminum foil.
Now, add your Nutella to the top of the brownie mixture. My 2/3 cup of Nutella just kind of plopped onto the batter. I gently swirled it into the batter. Don’t all out stir it in though!! Gently swirl it around. It doesn’t have to look pretty though. Remember: we’ll be topping these brownies with frosting anyway!
Bake for 25 minutes.
Cool brownies before frosting.
To make the cream cheese frosting:
In your mixer, combine cream cheese and butter. Mix for several minutes until very smooth. Add vanilla extract and mix. Slowly add in your powdered sugar. Scrape down the sides of the bowl as needed.
Once frosting is prepared and brownies are cooled, frost your brownies.
