One of my New Year’s Resolutions is to make more savory, “real food” for my blog. Because if I keep up with the sweets, none of my clothes are going to fit. Has this happened to other new bloggers??!? Uh oh.
So far, I’m off to a stellar start.
But today is a new day!!
Spaghetti with Sausage & Mushroom Sauce
Recipe slightly adapted from Food Network magazine–Nov ’11
Serves 4-6
Ingredients:
Kosher salt, to taste & to season the pasta water
box of whole wheat spaghetti
3 teaspoons EVOO
3/4 pound spicy ground Italian sausage
8 ounces of sliced mixed mushrooms (I used a combination of white button, baby bella & Shiitake mushrooms.)
black pepper, to taste
3 tablespoons tomato paste
1 teaspoon chopped rosemary
1/4 cup heavy cream
shredded parmesan cheese, for topping
Instructions:
Bring a pot of salted water to boil. Add the spaghetti. Cook per the instructions on the box. Reserve 1 cup of the pasta water. Drain pasta.
In a large non-stick skillet, heat 1 teaspoon of EVOO. Add the Italian sausage and cook until browned over medium heat. Transfer sausage to a bowl and set it aside.
To the skillet, add 2 teaspoons of EVOO. Over medium-high heat, add the mushrooms. Season with salt and pepper and cook for 3-4 minutes. Add in tomato paste and rosemary. Stir for 1 minute.
Return the cooked sausage to the skillet. Add the cream and reserved pasta water, stir. Bring to a gentle simmer and cook for 8-10 minutes. Season with salt and pepper.
Combine spaghetti and sausage & mushroom sauce.
Top with parmesan cheese, if desired.
It was a great variation on typical spaghetti and meat sauce. The spiciness of the sausage gave it a good kick.

Well, that certainly looks like a delicious, savory dish! I have a once-a-month indulgence post and I usually bake. I used to bake every.single.day…but my doctor has put the brakes to that one! This looks tasty and very nicely done!
Yeah, I have to cut back on baking or reign in my portion control. And me & portion control have been mortal enemies for a long time.

Every food blogger thinks they can do it without gaining, or even think they can lose weight while doing it, but dude it’s so hard. I have managed to lose weight while doing it but yeah. It came back. Good luck with those tight clothes-lol! The power of the fatty, comfort food and sugar, and how pretty it is on a blog. Oy! Soooo, this recipe doesn’t win any awards for its calorie content but dude, I needs me some of that. Looks SO good!
Yep, I am cutting back as well on my sweet indulgences. I am not buying the next size up. Whole wheat pasta is a great addition for this dish. Happy New Year.

I think a lot of people go with the sweets for blogging because they don’t have to worry about food cooling down while pictures are taken (or family members staging a coup over food cooling down). Your spaghetti looks delicious. I agree that the sausage would add an amazing amount of flavor!
When I make the sweet stuff, I try to sneak it out of the house and take it to work before the husband sees it. Then, I avoid the lounge at work and just hope to fatten up my co-workers. Anyway, there is my tip!
It’s been a long time since I’ve made spaghetti. I’ve never added cream to the sauce. I’ll be it’s delicious!

Oh yeah! New Year’s resolutions, right. Christmas sweets always make for tighter fitting clothes and we certainly appreciate your intention to make more savory dishes. Trouble is, the savory can be every bit as tempting as the sweet and the clothes just get tighter! Especially with dishes like this one, sooo good! Love the sausage and mushroom together… hard to resist. Back to the gym, I guess!
