S’Mores Bars

When I moved last month, I decided to buy a memory foam mattress pad.  Memory foam mattresses are all the rage, right?  There seems to be a mattress store on every corner now!!

I’m not made of money though, so just went with the foam pad.

Worst.decision.ever.

First of all, the dang thing was HEAVY.  It was a bear to get it on top of my mattress.  But okay, it was worth it, right?  Blissful sleep, here I come!

Um, no.  It was awful!  I fell asleep fine, but would wake up 2 hours later SO HOT!

I kept thinking that maybe I would adjust to it.  But last week at 3 am, awake AGAIN….I had enough!  I stripped off memory foam and dragged it to the hallway.

By then, I was mad and frustrated.  The cure….chocolate + marshmallows + graham crackers.

S’Mores Bars

Recipe from Per L’Amore Di Cibo

Ingredients:

1 cup graham cracker crumbs
1/2 cup light brown sugar
1/2 teaspoon salt
1 teaspoon baking powder
1/4 cup canola oil
2 tablespoons butter, melted
1 egg
2 cups mini marshmallows
8 ounces chocolate

I used a combination of Ghirardelli Dark and Milk & Truffle chocolates.

Instructions:

Preheat the oven to 350 degrees.  Line an 8 x 8 inch pan with parchment paper.  Set aside.
In a bowl, mix together the graham cracker crumbs, brown sugar, salt, and baking powder.  Then, add in the canola oil, melted butter, and egg.  Mix until you have a firm dough.
Press your dough into the bottom of your lined 8 x 8 inch pan.
Cook the bars from 20 minutes.

Top your cooked bars with the chocolate, covering the bars fully.  Then cover the entire pan with the mini marshmallows.

Return the bars to the oven and bake them for another 10 minutes.  Marshmallows will be a golden brown color.
Allow the bars to fully cool before removing them from the pan and cutting.

    Those look like the perfect thing to make you forget about anything, even a oversized mattress cover hovering in your hallway.

      I ended up taking off the mattress & then putting the mattress cover between the box springs & mattress. That was an easier option, since there was no way I could have drug that cover all the way to the dumpster!

      It’s fun & easy! The biggest problem will be making him wait until they cool fully to cut & eat them. 🙂

    Mattress stories always remind me of the time Brian and I bought a new mattress and boxspring set and decided to save the delivery charge by picking it up ourselves. It ended up being the coldest day in the history of the planet. We once carried a dining room table 10 blocks to our apartment on what was the hottest day of the decade. We’re a fun couple. Having some of these treats would probably have improved our mood on both those times! 🙂

    I am scared of memory foam. I have this nightmare of being sucked into it during the night. Sorry you didn’t have a better experience. These bars definitely would help the mood. The look quite fun.

      Hahahaha!! I was just surprised because I slept on one when at my aunt & uncle’s house when visiting them. And I didn’t wake up hot. But maybe I was just so tired over there since I was on the go all the day being on vacation.

      Oh well!

    Aw, poor Julie! Well, maybe lugging it on and off your bed at least burned off enough calories to warrant eating an entire pan of s’mores bars, that would make the pad worth it, right? lol They do look delish, and so much easier than the other recipe I’ve been wanting to try which actually has a graham dough on top and bottom and all sorts of other steps. I like this one!

    too funny! We have one of those mattresses and I know what you mean! My husband loves it but I don’t see what the big deal is with these memory foam mattresses. I can’t wait to make that dessert, I might try it tomorrow! I go back to work in a week, it won’t be the same without you…boo

    haha I have one of those foam mattress pads too and they are sooo HEAVY! ahahah, I feel for you 🙂 Those s’mores bars look awesome! That gooey marshmallow on top is irresistible!

    We have a memory foam bed, and it took forever to get used to. I would wake up sweating every night. Ugh. They make cooling matress pads that you can get at a mattress store or online. It really does wonders, and it’s not too expensive. Also, these bars look wonderful. I love s’mores!

    Oh my goodness that looks so good! CHOCOLATE!!! I’m going to have to try it. I was thinking of doing the same thing (buying a memory foam pad), thanks for the warning! I knew there had to be a downside…

      I’d like to see if a cooling mattress pad helps, but I don’t want to sink more money into it at this point. :/
