How’s your holiday weekend going? Mine? Ah, thanks for asking! Pretty great! 🙂
Yesterday, I went over to Amy’s for her brother’s 30th birthday party. It was H-O-T outside. Being outside for about 5 hours playing horseshoes wore me out. Who knew playing horseshoes would be a workout?? I was so tired and sore this morning!! At least I knew I worked off (and sweat out) the bottle of Skinnygirl margaritas that I drank! 🙂
Today, I had one thing on my mind….buying fireworks!! I had plans to have lunch at my parents’ and then shop for fireworks with my Dad. Dad had his own priorities (golf) and didn’t have anything ready for lunch. I suggested we go out for lunch instead! And Dad suggested Abuelo’s and we were off!
For those of you without an Abuelo’s near you, it’s similar to PF Chang’s, but with Mexican food. I use that comparison since the Abuelo’s & PF Chang’s are right by each other in Wichita. 🙂 But the comparison works nonetheless!
I usually get the stuffed chicken medallions at Abuelo’s which are very good. But today the carnita tacos caught my eye. Three “street food” style soft corn tortillas stuffed with slow roasted pulled pork and topped with lettuce, tomato and cheeses. (source)
The size of the tacos were the perfect small portion. I could eat all three without feeling stuffed! The flavor of the pork was flavorful. I did have a fatty piece of pork in one of my tacos, which wasn’t ideal. But overall, I liked my tacos. And I was in love with the metal taco stand they came on too!! I usually don’t order tacos because everything falls out! I need one of this cute taco stands! I’m sure they aren’t called “taco stands”, but I want whatever they are! 🙂
I got home around 2:30 pm and had two plans: read and nap! And about 30 minutes after reading, a big ol’ thunderstorm happened. Afternoon thunderstorms=perfect reading and napping weather. I’m already halfway through a new book now!
Okay, I’m off to read some more until True Blood starts!!
